21-Day Keto Diet: Day 12 (St. Patrick's Day)

Happy St. Patrick's Day all!  We had a great day today.  My mom-in-law, sis-in-law and nieces came into town. We hadn't seen them in quite a while, and Lil' Man had a good time playing with his cousins.

Breakfast: Coconut Flour Pancakes with sugar-free syrup (regular syrup for Lil' Man), sausage, and a strawberry.
Lunch:  We went to McDonalds so the kids to play after eating (and so Grandma could treat them to ice cream).  I had the Grilled Chicken Bacon Ranch Salad (net 5 carbs), with balsamic dressing (1/2 packet, 2 net).  The Hubs had two McDouble's with no bun or ketchup, and ordered extra lettuce to use as a wrap.  
Dinner:  It's St. Paddy's Day!  What else would we have, but corned beef and cabbage?  We made some Thousand Island dressing (since everything at the store was at least 5g carbs/serving...and there's no purpose in buying a whole bottle and letting it languish in our fridge for 3 years).  Added some sauerkraut (0 carbs), Swiss cheese, and wrapped it in a steamed cabbage leaf.

Totals:1343 kcal, 95.5g fat, 21 net carbs, 100g protein

My Thoughts:  Today was a really good day. I felt good, had a good time with family, and got a lot done around the house this morning.

Hubs' Thoughts: Ditto.

“Irish Breakfast”.

GOOD MORNING!!!

Oh, sorry, did that hurt your head?  Hrm.  Have a little bit too much green beer last night?  Oh, and those Irish Car Bombs…they sneak up on you, too.  And those $3 Jameson shots sounded like SUCH a good bargain, amiright?

Well, you know what they say: “Hair of the dog…”

So howsabout an Irish Breakfast this morning???

No, no, not eggs & rashers, I’m talking about this:

1 oz Jameson whiskey

1 oz Butterscotch schnapps

2 oz orange juice (in a separate glass)

 

Directions:

Take the one on the left.  Chase it with the one on the right.

Bacon optional.

 

Then go back to bed.

 

(P.S. yes, in many circles this is referred to as a Pancake shot—for reasons that will be obvious after you drink it—but it’s the day after St. Pat’s, and that’s just not as topical.)

Thirsty Thursday, Part Deux: Green Hurricanes!!!

Okay, so the moment of brilliance from this morning resulted in an after work cocktail.  I’ll try to keep this quick, since I’m like 3 days behind on Words with Friends (sorry, friends!!!)  I mean, come on—even St. Patrick’s Day can be Cajun-i-fied!

Ingredients:

1 part white rum

1 part blue curacao

2 parts pineapple juice

3 parts orange juice

Mix with ice, & strain into fancy glass.  Serve with green garnish.
